2 cups water 2 cups vinegar 4 tsp salt 1 tsp sugar 1 tsp whole black pepper 5 bay leaves 2 lb pork belly 1 envelope gelatine powder
Bring water, vinegar, salt, sugar and bay leaves to a boil. Add the pork belly and reduce the heat to a simmer. Let simmer for 40-60 minutes. Take the pork belly out and place in a deep dish. Bring half of the remaining liquid to a boil and add the gelatine while stirring. Pour the liquid onto the meat and refrigerate (preferably until the next day).
Serve with rye bread/sour dough bread, mustard, pickled cucumber, pickled beets etc. Can also be enjoyed with scalloped potatoes.
