Vand med suppevisk eller bouilon

Læg hamburgerryggen i en gryde med vand med suppevisk eller bouillon og bring i kog. Skru
ned for varmen og lad simre i ca. 30 minutter.
Server med kartofler, grøntsager, agurkesalat, rødbeder, asier o.s.v.
Hamburgerryg kan også bruges til pålæg. Skæres i tynde skiver og lægges på rugbrød eller i
sandwich.

Smoked Pork Loin
Water with bouquet garni or bouillon

Put the pork loin in a pot and cover with water/bouquet garni or bouillon. Bring to a boil. Turn the heat down to low and let simmer for approximately 30 minutes.

Serve with potatoes, vegetables, pickled cucumber, red beets, etc.

The pork loin is also excellent for cold cuts/sandwich meat for any kind of (open faced or regular) sandwiches.

Stegt Flæsk

1 pakke fersk flæsk (2 pund)
Salt

Del flæsket i 3 pr. flæskestykke og læg på en bageriste over en bradepande (husk at lægge bagepapir i bradepanden, så den er nemmere at gøre ren bagefter. Drys salt på flæskestykkerne og sæt i ovnen ved. 350F (varmluft). Steg i ca. 45 minutter. Vend flæskestykkerne et par gange undervejs. Når den stegte flæsk er klar, tages de ud af ovnen og lægges på et stykke bagepapir for at tage den overskydende fedt og gøre dem ekstra sprøde. Læg på serveringsfad og server med kogte kartofler, persillesovs og grøntsager.

Fried Pork Belly

1 package pork belly (2 lbs)
Salt

Cut the pork belly strips into 3 each and place on a rack over a pan (cover pan with parchment paper for easier clean-up). Sprinkle salt onto the pork belly pieces and place in oven at 350F (convection). Bake for approx. 45 minutes. Turn several times. When the pork belly is ready (crunchy), take out of and place briefly on a piece of paper towel to make the pieces even more crunchy. Arrange on a platter and serve with boiled white potatoes, parsley sauce a and vegetables of your choice.

Sønderjysk Surrib

Sonderjysk Surrib

½ liter vand

½ liter eddike

4 tsk salt
1 tsk sukker
1 tsk hel sort peber
5 laurbærblade
2 lb fersk flæsk
1 brev gelantine

Vand og eddike, salt, sukker og laurbærblade bringes i kog. Flæsket lægges i. Skru ned for varmen. Lad det simre i 40-60 minutter. Tag kødet op og læg i et fad. Halvdelen af væsken koges op igen. Tilsæt gelatinen og rør godt rundt. Hæld væsken over kødet og stil på køl.

Server med rugbrød, sennep, syltede agurker og/eller rødbeder. Kan også nydes med stuvede kartofler.

Sønderjysk Surrib – English

Sonderjysk Surrib

2 cups water
2 cups vinegar
4 tsp salt
1 tsp sugar
1 tsp whole black pepper
5 bay leaves
2 lb pork belly
1 envelope gelatine powder

Bring water, vinegar, salt, sugar and bay leaves to a boil. Add the pork belly and reduce the heat to a simmer. Let simmer for 40-60 minutes. Take the pork belly out and place in a deep dish. Bring half of the remaining liquid to a boil and add the gelatine while stirring. Pour the liquid onto the meat and refrigerate (preferably until the next day).

Serve with rye bread/sour dough bread, mustard, pickled cucumber, pickled beets etc. Can also be enjoyed with scalloped potatoes.
